Comfort Food Doesn't Need Gluten

Delicious food isn’t hard to find, but inclusive food can be. Marilyn Besner knew this and decided to take action. From culinary school graduate to business owner, Marilyn is the sole creator and owner of WildFlour, a gluten-free comfort food cafe. Located on Main street, WildFlour is the perfect place for gluten-free consumers, vegans, and vegetarians alike. Although she isn’t gluten-free herself, Marilyn saw the need for not only gluten-free but tasty food in central New Jersey. “I’m not gluten-free. I had a friend that found it hard to find a birthday cake that was gluten-free, but also fresh. I realized it was my niche, and understood that you can’t have cross-contamination,” she says. “I love to cook. I knew I needed training, so I went to the French Culinary Institute to learn about Restaurant Management.” Marilyn lives in Princeton, NJ, but saw an opportunity in Lawrenceville. In late 2012, she met the owner of the Lawrenceville Inn. They built a relationship, and when she found out they were selling, jumped at the chance and opened her gluten-free kitchen. With her love of cooking and training in her pocket, Marilyn knew she’d be successful. “I know my way around the kitchen,” she says. However, the business side of things was harder for Marilyn. It was a learning curve, and she had to adjust to balancing business with passion. Ten years later, WildFlour is the go-to place for inclusive comfort food and continues to grow. WildFlour’s menu is full of flavor, to say the least. From breads, cakes, and other baked goods, to sandwiches, dips, and quesadillas, WildFlour has something for everyone. Their online menu has filters, so you can find exactly what fits your needs, including dairy, soy, or eggs, all bases are covered when it comes to dietary restrictions.

Even though their products are completely gluten-free, WildFlour is a great option for anyone - even gluten-eaters. “Most of the time, family members or friends of someone with a gluten intolerance need a seat at the table,” Marilyn says. “It allows for inclusivity but is tasty enough for everyone.” Just ask her yourself! Even though she can eat gluten, Marilyn loves her vegan wraps and sandwiches for lunch and says her customers can’t even tell they’re gluten-free. Since the pandemic began, WildFlour was inspired to bring their gluten-free foods to their customers in a more accessible way. That’s when “For Your Freezer” was born. This includes dishes such as macaroni and cheese, lasagna, and vegan pot pie to store in your freezer and bake whenever you like. Not only is this convenient, but it’s a way to keep your favorite gluten-free dish fresh. Similarly, the “For Your Pantry” line lets WildFlour’s baked goods and snacks be accessible in the comfort of your home. Also big on catering, WildFlour’s biggest customer is Princeton University, and are currently working on getting their food in the University dining hall. Marilyn has been working with the Lawrenceville community for years. WildFlour caters to birthday parties, special events, and family gatherings like Thanksgiving. “We love being a part of the Lawrenceville community,” she says. “We interact with the Main Street organization, make donations, and participate in fundraisers.” Her favorite is PEI Kids, a service for children in Mercer County. Marilyn has a lot to be proud of. Even though WildFlour was created independent- ly, she was able to build a great team behind her. Her company is certified Woman Owned and a Validated Gluten Free Safe Spot. “My general manager has been with us for eight years,” says Marilyn. “I'm most proud of my team, and being able to create a family in the bakery.” Today, WildFlour is continuing to expand. They’re currently working on getting products into retail stores in Philadelphia and local grocery stores. Marilyn knows her products will also do well in both retail and cafes. “Gluten-free is high in demand!” she says. “Come by! We have wonderful foods for everyone.” WildFlour is the perfect gluten-free source that has something for everyone. Whether it be takeout, frozen food, or baked goods, there will definitely be a dish you’ll love. Marilyn was able to turn an idea into an inclusive cafe that doesn’t sacrifice taste.
